Most Nepali dishes can be made any day of the year. Kwati cannot. It is made once — at Janai Purnima, the full moon of Shrawan (July/August) — and then it disappears from kitchens until the following year. It is one of the most nutritionally sophisticated dishes in Nepali cuisine, and it takes three days to prepare properly. The wait is the point.

How to Make Kwati Abroad — 3-Day Process

Authentic Kwati requires planning. The sprouting takes 2–3 days before you even turn on the stove. This is not a weeknight dinner — it is a weekend project, ideally timed to coincide with Janai Purnima. But you can make it any time you want the nutritional and flavour benefits of sprouted legumes.

Day 1–2: Sprouting the Beans

Soak: Mix 2 cups of Kwati bean mix (or your own 9-bean combination). Rinse well and soak in cold water for 12 hours or overnight. The beans will double in size — use a large bowl.

Drain and wrap: Drain thoroughly. Spread on a damp cloth or muslin, fold over the beans, and tie loosely. Place in a warm spot (20–25°C) — a kitchen cupboard or inside an off oven works well.

Rinse twice daily: Every 12 hours, rinse the beans under cold water, drain, and rewrap. This prevents mould and keeps them moist. After 36–48 hours you will see small white sprouts (2–5mm). That is when they are ready.

Day 3: Cooking the Kwati

Temper the spices: Heat 2 tbsp mustard oil in a heavy pot until it smokes slightly, then reduce heat. Add ½ tsp fenugreek seeds — they will splutter and turn dark (30 seconds). Add 1 finely diced onion, fry until golden.

Build the base: Add 1 tbsp fresh ginger (grated), 4 garlic cloves (minced), ½ tsp turmeric, 1 tsp salt, ½ tsp timur (or Sichuan pepper), 1 tsp cumin powder. Stir for 2 minutes until fragrant.

Add tomatoes: Add 2 diced tomatoes (or 1 tin crushed tomatoes). Cook down for 5 minutes until the oil separates from the masala. This step is called "bhuning" — the tomato acid blooms the spice compounds into fat-soluble flavour.

Add sprouted beans and water: Add all sprouted beans. Cover with 1.5 litres of water. Bring to the boil, then simmer with lid on for 45–60 minutes, until all beans are fully tender. Kidney beans must be fully soft — check these first.

Finish and adjust: Taste and adjust salt and timur. The soup should be thick, lightly spiced, and deeply savoury. Finish with 2 tbsp fresh coriander and a squeeze of lemon. Serve hot with beaten rice (chiura) or plain rice.
Pressure cooker shortcut: After step 3, add the sprouted beans and 1 litre of water to a pressure cooker. Cook for 20 minutes at high pressure, natural release. This halves the cooking time and is perfectly acceptable — the flavour difference is minimal. Especially useful for chickpeas and kidney beans, which take longest.

The Diaspora Kwati: Keeping the Ritual

If you are Nepali and living abroad, Janai Purnima may slip past without notice — no neighbours making it, no smell from the kitchen next door, no shared pot across the fence. It becomes an individual act of memory rather than a collective one.

But Kwati is worth making alone or with a small group precisely because the process is the ritual. The three days of soaking and sprouting, the checking twice daily, the smell that fills the kitchen on cooking day — this is the ceremony, not just the eating. The soup at the end is the reward for the waiting.

In Australian cities, the Kwati mix is available at most Indian grocers and Nepali specialty stores. In Sydney, Melbourne, Brisbane, and Perth you should be able to find either a pre-mixed packet or the individual beans. The one hardest to source is moth beans (matki) — substitute with extra black-eyed peas or field peas without losing much.
